Ingredients For peachy chicken

  • 3 / 4
    (thinly sliced) boneless, skinless, chicken breast
  • 1/2 c
    all purpose flour
  • 1/2 tsp
    salt and pepper (to taste)
  • 2 Tbsp
    olive oil, extra virgin
  • 1 can
    (15 oz) sliced peaches, drained, juice reserved
  • 2 Tbsp
    light brown sugar
  • 2 Tbsp
    cooking sherry
  • 1 tsp
    dried basil
  • 1/4 tsp
    ground allspice

How To Make peachy chicken

    Pat dry each piece of chicken In a bowl, or on a large plate, combine flour, salt and pepper. Coat each chicken piece in the flour mixture: set aside.

    Pour olive oil into a large skillet and heat over medium high heat. Place chicken pieces into skillet and cook rapidly until browned on both sides.

    Place browned chicken pieces into an 11 x7 x2 inch baking dish. Arrange peach slices around the chicken; set aside.

    Add water to peach juice to make 1 cup liquid; pour into a small mixing bowl. Stir in brown sugar, sherry, basil, and allspice. Pour over the chicken pieces; cover with foil.

    Bake in a preheated 350 F oven for 45 minutes or until internal temperature of chicken is 165 F.

    Serve chicken with peaches and juice.
