Ingredients For double-coated chicken

  • 7 c
    corn flakes, crushed to 1 3/4 cups
  • 1
    egg
  • 1 c
    fat-free milk
  • 1 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 3 lb
    chicken pieces,with or without skin, rinsed and dried
  • 3 Tbsp
    butter or margarine, melted

How To Make double-coated chicken

    Place crushed corn flakes in a dish, set aside

    In medium mixing bowl, beat egg and milk slightly. Add flour, salt and pepper.Mix until smooth. Dip chicken in batter. Coat with cereal. Place in a single layer, in shallow baking pan coated with cooking spray or foil lined. Drizzle with melted butter or margarine.

    Bake at 350 degrees for about 1 hour or until chicken is tender, no longer pink and juices run clear, For food safety the internal temp of the chicken should reach 165 degrees. Do not cover pan or turn chicken while baking. Serve hot.
