This is a healthy version of chicken salad.

Ingredients For cool chick salad

  • 2 c
    chopped cooked chicken breast
  • 1 c
    canned black beans, drained and rinsed
  • 1 1/2 c
    diced tomatoes
  • 1 c
    whole kernal corn
  • 1/2 c
    diced red onions
  • 1/4 c
    chopped fresh coriander
  • DRESSING
  • 2 Tbsp
    lime juice
  • 1 Tbsp
    olive oil
  • 1/2 tsp
    each ground cumin and sugar
  • 1/4 tsp
    each salt and black pepper

How To Make cool chick salad

  • 1
    Combine first 6 ingredients in a large bowl and mix well.

    In a small bowl, whisk together dressing ingredients. Pour over bean mixture and stir until dressing is evenly distributed.

    Cover and refrigerate until ready to serve.
