Ingredients For chicken with dumplings

  • 3 ½ lb. chicken
  • 3 carrots
  • 3 stalks celery
  • 3 cloves garlic
  • rub for chicken:
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. turmeric
  • ½ tsp. curry powder
  • 2 tablespoons olive oil
  • dumplings:
  • 1 cup flour
  • 1 tbs. baking powder
  • 1 tsp. sugar
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 tablespoon margarine
  • ½ cup milk

How To Make chicken with dumplings

    Preheat Oven 350 degrees: Combine the ingredients for the rub in a small bowl. Place cleaned chicken in a baking pan. Rub the chicken with the rub-mixture. Place carrots, celery and garlic around the chicken. Fill the baking pan half-way with water. Bake the chicken 55-60 minutes or until the juices run clear. For the Dumplings: Place the dry ingredients in a bowl. Add the margarine. Cut the margarine until crumbly. Add the milk while stirring. Take the broth and veggies from the cooked chicken and place in a sauce pot. Heat the broth to simmering and spoon dumplings into the pot. Cover and let simmer for approximately fifteen minutes. Serve the chicken broth and dumplings with the chicken.
