easy chicken casserole

My whole family live this recipe. I started making this one day because the ingredients were all I had in the house. Now I make it in similar ways. Sometimes I use smoked sausage instead of chicken. Meat is done a little different and I will post that on here as well. Sometimes I had about a half a can of peas to the rotel and cheese mixture. It's filling. Also if you don't want to boil the chicken and you have one you can steam it. Then after shredding put the chicken in a skillet with the veg stock and cook till it coated. Very good that way too.

Ingredients For easy chicken casserole

  • 4
    chicken breasts, boneless and skinless
  • 4 pkg
    veg stock (small)
  • 1 can
    rotel (large) not drained
  • 1 lg
    box velveeta cheese
  • dash
    salt and pepper to taste
  • 2 box
    pasta (any style),i use small bowties.

How To Make easy chicken casserole

    Boil chicken until done but juicy with water and vegetable stock. Drain and shred.

    Cut Velveeta into small cubes and add rotel. Microwave in glass container for about six minutes stirring after three minutes. Continue stirring every two minutes until melted thoroughly.

    Boil pasta until soft and drain.

    Mix all ingredients together. Salt and pepper to taste.
