This recipe comes from an old Better Homes and Garden Ground Meat Cookbook, c1973. I have made this recipe for my son a long time ago. it is very tasty, and a good way to get kids to eat their vegetables. My son hated vegetables when he was growing up. This recipe he liked. If you can't get tomato sauce with mushrooms just use tomato sauce. You could change the vegetable to corn or whatever vegetable you want.

Ingredients For stack-a-dinner

  • 1 lb of ground beef
  • 1/2 cup chopped onions
  • 1-8 oz can of tomato sauce with mushrooms
  • 3/4 cup of ketchup
  • 1/2 tsp dried oregano leaves crushed
  • 3 drops bottled hot pepper sauce
  • 2 cups uncooked packaged precooked rice (instant rice)
  • 1-10 oz package of frozen peas
  • 1 cup sharp shredded american cheese
  • sliced pimento-stuffed green olives

How To Make stack-a-dinner

    In a skillet brown meat with onions; drain off fat
  • 2
    Add tomato sauce, and next three ingredients.1/4 cup of water, 1/4 tsp of salt and a dash of pepper; bring to boiling stirring often

    Cook rice and prepare peas following package directions
  • 4
    On individual serving plates , layer rice, peas, meat mixture, then cheese, trim with olives
