I love simple/easy dishes and they don't get a lot easier than this one. Casseroles are also a favorite as everything is in one dish. So this fits the bill on both counts. Also, it is one of the favorite family meals. I serve it up with a bunch of crusty bread and butter on the side. There a few in the family who like it a bit "hotter" so a bottle of Franks Original hot sauce is always on the table for them. Try it, I think you will enjoy it. Phil

Ingredients For southwestern casserole

  • 1 lb
    ground beef
  • 4 oz
    chopped can diced green chilies
  • 10 oz
    enchilada sauce (red or green)
  • 10 oz
    can cream of mushroom soup
  • 1 sm
    onion
  • 1 dash
    garlic powder
  • 8 oz
    grated cheese
  • 3 c
    corn chips

How To Make southwestern casserole

  • 1
    Brown Beef with diced onion. Drain. Add mushroom soup (undiluted) and garlic powder. In casserole or baking dish layer the corn chips, meat mixture, enchilada sauce and cheese. Repeat layers ending with corn chips. Bake covered 350 degrees for 30 minutes.
