Lon Evans was once the Sheriff of Tarrant County, TX. He would cook big batches of his chili and serve it to the inmates at the Tarrant County Jail. all the inmates swore that it was the best chili they had ever eaten. I wonder if that was because the sheriff had made it or if they really liked it?

  • 1/8 lb
    beef suet, finely chopped
  • 3 lb
    round steak or chuck roast, coarsely ground
  • 6 Tbsp
    chili powder
  • 1 Tbsp
    ground oregano
  • 1 Tbsp
    crushed cumin seed
  • 1 Tbsp
    salt
  • 1 tsp
    red pepper
  • 2 clove
    garlic, minced
  • 1 1/2 qt
    water
  • 1 tsp
    tobasco sauce
  • 3 Tbsp
    masa harina
  • 1 can
    (8 ounces) tomato sauce

    In a Dutch oven, fry suet until crisp, add the ground meat and brown.

    Add the chili powder, ground oregano, crushed cumin seeds, salt, red pepper, garlic, and tobacco sauce and water. heat to boil.

    Reduce heat, cover and simmer on low for 1 1/2 hours. Skim off fat if desired. Stir in Masa meal and simmer, uncovered, for 30 minutes. Stirring occasionally.

    This is very good with pinto beans.
