Lon Evans was once the Sheriff of Tarrant County, TX. He would cook big batches of his chili and serve it to the inmates at the Tarrant County Jail. all the inmates swore that it was the best chili they had ever eaten. I wonder if that was because the sheriff had made it or if they really liked it?

1/8 lbbeef suet, finely chopped

3 lbround steak or chuck roast, coarsely ground

6 Tbspchili powder

1 Tbspground oregano

1 Tbspcrushed cumin seed

2 clovegarlic, minced

1 1/2 qtwater

1 tsptobasco sauce

1 can(8 ounces) tomato sauce
How To Make sheriff lon evans' famous jailhouse chili

1In a Dutch oven, fry suet until crisp, add the ground meat and brown.

2Add the chili powder, ground oregano, crushed cumin seeds, salt, red pepper, garlic, and tobacco sauce and water. heat to boil.

3Reduce heat, cover and simmer on low for 1 1/2 hours. Skim off fat if desired. Stir in Masa meal and simmer, uncovered, for 30 minutes. Stirring occasionally.

4This is very good with pinto beans.
