Ingredients For santas chili

  • 2 lb
    coarsley ground beef
  • 2 lb
    coarsley ground pork
  • 2 lb
    coarsley ground veal
  • 1 c
    oil
  • 3/5 Tbsp
    chili powder, hot (to taste)
  • 6 Tbsp
    cumin
  • 6 clove
    garlic
  • 2 md
    onions chopped
  • 6
    dried chili peppers or crushed red peppers
  • 1 bottle
    beer (i like dark beer)
  • 1 Tbsp
    oregano, dried
  • 2 Tbsp
    paprika, hot (to taste)
  • 2 Tbsp
    cider vinegar
  • 3 c
    beef broth, reduced sodium
  • 4 oz
    ortega green chilies
  • 14 oz
    canned diced tomatoes with juice
  • several dash
    franks hot sauce (again to taste)
  • 2+ Tbsp
    mesa flour

How To Make santas chili

  • 1
    Brown meat in hot oil til browned, adding black pepper to taste. Drain meat add chile powder, cumin, garlic and chopped onions. Cook 30-45 minutes using as little of the beer liquid as possible. Stir often.

    Remove skins from chilis, mash pulp and add to meat mixture. Strain oregano and beer and add some of the beer mixture, paprika, vinegar, 2 cups of beef broth, green chilies, stewed tomotoes and hot sauce Stir and simmer for another 30 to 45 minutes. STIR OFTEN!

    Disolve 2 tablespoons of mesa flour intosome of the beef broth. and add to chili mixture. This will thicken everything up. STIR OFTEN!
