I make this ahead and freeze. On the day I want to serve this, I simply thaw the meat mixture, layer in tortillas, top with cheese, and bake! I serve this with Mexican Rice

Ingredients For quesadilla casserole

  • 1 lb
    ground beef
  • 1 md
    onion, chopped
  • 1 Tbsp
    chili powder
  • 1 tsp
    cumin
  • 1 tsp
    garlic
  • 1/2 tsp
    oregano, dried
  • 1/2 tsp
    crushed red pepper
  • 16 oz
    tomato sauce
  • 1 can
    beans (any variety)
  • 1 can
    whole kernel corn
  • 1 can
    (4.5 oz) green chilies
  • 2-3 lg
    tortillas
  • 2 c
    shredded cheese (of your choice)

How To Make quesadilla casserole

    Cook together ground beef and chopped onion.

    In a large mixing bowl, mix together the meat mixture and all of the ingredients, except tortillas and cheese.

    FOR FREEZER VERSION: Place this mixture in a freezer-safe zip top bag or container. Thaw on day of serving.

    Layer tortillas, meat, cheese and repeat, ending with cheese. Bake at 400 until bubbly and cheese is melted and golden brown.
