manicotti enchiladas

These enchiladas are something different that are easier to serve without breaking apart. Very tasty and easy to prepare. I like to serve them with a side of mexican style rice.

Ingredients For manicotti enchiladas

  • 1 lb
    lean ground beef or turkey cooked
  • 1 16oz can
    refried beans
  • 4 oz
    cream cheese
  • 1 package
    taco seasoning mix
  • 2 cups
    monterey jack cheese
  • 12
    manicotti shells al dente
  • 2 16oz can
    enchilada sauce of choice
  • 1 sm can
    diced tomatoes with chilies
  • 12
    corn tortillas softened
  • sour cream

How To Make manicotti enchiladas

    In large mixing bowl mix meat, beans, taco seasoning, softened cr cheese and 1 cup Monterey jack cheese.

    Divide mixture among 12 corn tortillas warmed in microwave for easier rolling. Spread mixture on corn tortilla, roll up and insert into Al dente manicotti.

    Spray large baking dish with cooking spray. Put 1 can of enchilada sauce in baking dish along with the 1/2 c water.

    Lay your stuffed manicotti in sauce.

    Top with the canned tomatoes, 2nd can of enchilada sauce and remainder of cheese.

    Cover with foil and bake at 350 for 30-45 min. Uncover and bake for an additional 5-10 min

    Let stand uncovered for 5 min. Serve and top with a dollop of sour cream, shredded lettuce more cheese or any toppings of choice!
