But I can re-invent the bacon cheese burger! I got this brain storm in the middle of the night { which is where most of my ker~razy recipes happen } on how to re-invent this classic dish! So this is my take on …re-inventing the wheels on the bus goes round and round…ha ha ha! I really should start sleeping more. Oh and guess who forgot to pick up a tomato today? I’ll give you a hint…Irisa did!

Ingredients For i can’t re-invent the wheel….

  • ¾ pound ground sirloin 80/20
  • 6 ounces of thick cut apple wood bacon { cut into small bite size pieces } or any bacon you prefer
  • 1 medium onion { sliced thin }
  • sharp cheddar cheese { grated } use as much or as little as you like
  • 1 tablespoon fresh ground pepper
  • 1/8 teaspoon fine sea salt
  • salted butter { for the buns }
  • buns { toasted }

How To Make i can’t re-invent the wheel….

    Cut the bacon into small bite size pieces and fry till very crisp, remove but do not discard the grease.

    Fry the onions in the grease till they are translucent and begin to caramelize. Remove from the grease. Do not discard the grease.

    Mix the sirloin with the bacon, pepper, salt and make the patties. Try not to over mix the meat; it will make the patties tough.

    Fry the patties in this wonderful flavored bacon/onion grease. There won’t be too much grease because the onions will have absorbed some. OMGoodness bacon flavored onions!!!

    Butter and toast the buns { this is just another level of flavor ! } And it’s those little touches that can break or make a dish.

    Drain on paper towels and while they are still hot top with the grated cheese, and pile the onions on the bottom of the bun. Serve with and pickles & chips.
