Ingredients For greek inspired beef stew

1 lbstewing beef

2medium tomatoes
-
2 clovegarlic
-
2 Tbspsugar or xylitol
-
3/4 cdry red wine
-
1 Tbspbalsamic vinegar

1/4 craisins
-
20green olives
-
1/4 ccanned tomatoes

1/3 cbeef broth
-
1 stickcinnamon
-
1/8 tspallspice
-
salt, to taste
-
pepper, to taste

olive oil for frying
How To Make greek inspired beef stew

1Chop shallot and tomatoes and mince garlic.

2In a large pot, heat enough olive oil to brown the beef. Brown the beef on all sides (in batches if the pot isn't big enough), then add shallot and garlic and continue browning until shallots are translucent.

3Add sugar, cinnamon and allspice, stir and mix well, then add chopped tomatoes. Fry until tomato pieces fall apart and become brownish. Add about 1/4 teaspoon salt.

4Deglaze with balsamic vinegar and red wine, reduce until nearly evaporated, then add canned tomatoes and broth, reduce liquid some more, then lower heat, season with pepper, cover pot and simmer on low heat for about 1 hour.

5Add raisins and olives, simmer another 30-45 minutes or until meat is tender.

6Serve with vegetables or rice and vegetables.
