My son in laws mom gave this recipe to me and I loved it! It is a little spicy, but that's what made it taste so good, and the meat was so tender.

Ingredients For easy mexican-style pot roast

    canola oil
  • 1
    3 lb boneless beef chuck roast
  • 1
    14.5 oz can whole tomatoes, undrained, chopped
  • 1
    4 oz can chopped green chiles
  • 1
    envelope taco seasoning
  • 1
    beef bouillon, crushed
  • 1 Tbsp
    brown sugar
  • 2 Tbsp
    water
  • 1 Tbsp
    cornstarch

How To Make easy mexican-style pot roast

    In lg pot, heat oil over medium heat. Brown roast on all sides. In bowl, combine tomatoes w/ their juices, chiles, taco seasoning, bouillon, and brown sugar.

    Pour mix over roast. Reduce heat to low. Simmer 3-3-1/2 hrs, or until meat is fork tender. Remove roast to platter, keep warm.

    In measuring cup, whisk together water and cornstarch. Pour into pot. Stir until it thickens. Serve sliced roast w/ sauce.
