easy beef and bean burritos

Sometimes I just have to have some Mexican food but I don't want to go out to a restaurant. I usually keep everything in this recipe on hand so when I get the craving, I whip them up right here in my kitchen. Easy, tasty, and satisfying.

Ingredients For easy beef and bean burritos

  • 1 lb
    ground beef
  • 3/4 c
    chopped onion
  • 1 clove
    garlic, minced
  • 2 tsp
    chili powder
  • 1 tsp
    dried oregano
  • 1/2 tsp
    ground cumin
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1
    16 oz. can pinto beans or 1 can refried beans
  • 1/2 c
    enchilada sauce
  • 6
    10 inch flour tortillas
  • shredded lettuce
  • garnishes: sour cream, shredded cheddar, chopped tomatoes, guacamole

How To Make easy beef and bean burritos

    In a large skillet over medium heat, cook ground beef, onion, and garlic until meat is browned, stirring often to break up meat. Drain well. Add chili powder, oregano, cumin, salt, and pepper; simmer for 10 minutes. Add beans and 1/2 cup of enchilada sauce. Heat thoroughly.

    Wrap tortillas in foil and place in a 350° oven to heat for 10 minutes. Spoon about 1/2 cup of the ground beef mixture onto each tortilla; sprinkle with cheddar cheese, sour cream, and chopped tomatoes. Roll tightly and place seam-side down on serving platter lined with shredded lettuce. Recipe makes 6 burritos.

    NOTE: I have also used some cooked rice with this recipe and thought it was tasty. Just layer it with the rest of the ingredients in the tortilla. Your choice.
