Adults & kids love this too - perfect on a Friday night. Hearty dish that is tasty and satisfies! All you need is a green salad or fruit salad to finish it off or even cinnamon applesauce. Enjoy!

Ingredients For cowboy casserole

  • 1 1/2 lb
    ground beef
  • 28 oz
    favorite pork & beans
  • 14 1/2 oz
    diced tomatoes - drained
  • 14 1/2 oz
    niblet corn - drained
  • 2 c
    grated cheddar or monterey jack cheese
  • crushed doritos chips
  • salt & pepper to taste
  • 1
    envelope fajita seasoning mix (or taco)

How To Make cowboy casserole

  • 1
    Brown ground beef - drain well. Add Fajita seasoning and 1/2 cup water. Let cook 2 mins. Add drained tomatoes, stir well. Add pork & beans and corn, stir well. Stir in half the grated cheese. Srpay casserole dish with cooking spray - add layer of crushed Doritos (you decide amount but I like to make sure the bottom of the casserole dish is completely covered and then some). Pour mixture over Doritos. Bake at 375* until bubbly and heated through. Remove from oven and top off casserole with remaining shredded cheese followed by another layer of crushed JDoritos. Return to oven additional 5 mins. Optional - you can use a can of Rotel tomatoes with chilis if desired. Sooo good!
