My family absolutely loves my enchiladas. Can adjust heat of dish by going a step up or down on the heat in the enchilada sauce. Great served with a salad and refried beans.

Ingredients For beef enchilada bake

  • 1 1/2 lb
    ground beef
  • 1 1/2 pkg
    taco seasoning
  • 6
    soft taco size flour tortillas
  • 1 can
    black olives
  • 2 md
    tomatoes
  • 1/2 lg
    onion, chopped
  • 3 c
    shredded cheddar cheese
  • 1 can
    large, medium hot enchilada sauce
  • sour cream to taste

How To Make beef enchilada bake

    Preheat oven to 350 degrees. Spray or grease a 9x12 baking pan. Place the 6 tortillas in the pan taco style, with the opening facing up.

    Prepare ground beef as directed on seasoning packages.

    Drain Olives and cut into quarters, chop tomatoes, chop onion,place all 3 ingredients in a bowl, toss together, and set aside.

    Dividing ingredients evenly, fill each taco shell with ground beef, bowl mixture, and 1/2 cup shredded cheese. Then roll each tortilla until the ingredients are fully enclosed in the tortilla, in the pan. Carefully pour enchilada sauce over the top, covering each enchilada completely. If desired, top with additional shredded cheese. Cover with foil and bake in the oven for 45 minutes.
