Ingredients For tortellini soup

  • 1 lb
    italian sausage, no casings
  • 1 c
    onion, coarsely chopped
  • 2 clove
    garlic, sliced
  • 5 c
    beef broth
  • 1/2 c
    water
  • 1/2 c
    dry red wine or water
  • 2 c
    tomatoes (or 4 medium chopped, seeded, peeled tomatoes)
  • 1 c
    carrots, thinnly sliced
  • 1/2 tsp
    basil
  • 1/2 tsp
    oregano
  • 8 oz
    (1 can) tomato sauce
  • 1 1/2 c
    zucchini (mom said she used canned if she had to)
  • 8 oz
    cheese filled tortellini
  • 3 Tbsp
    parsley
  • 1 md
    green pepper, cut in to 1/2 pieces. (i omit cuz i don't like green pepper!!)
  • grated parmesan cheese

How To Make tortellini soup

    If you use sausage that came in a casing, remove.
  • 2
    In a 5 quart dutch oven, brown the sausage. Remove the sausage, but keep about 1 tablespoon of the drippings in the dutch oven.

    Saute the onions & garlic in the sausage drippings in the dutch oven until the onions are tender.

    Add beef broth, water/wine, tomatoes, carrots, basil, oregano, tomato sauce & sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes (savor the aroma!!)

    Stir in zucchini, tortellini, parsley, & green pepper. Cover and simmer for an additional 35-40 minutes or until the tortellini are tender.

    When serving, sprinkle with the grated parmesan cheese, if desired. (I skip this!) Serve with yummy warm crusty bread or bread sticks!
