i just tried this recipe tonight and it turned out great . usually i just make it plain, but tonight i wanted to try it with veggies and it was delicious !

Ingredients For risotto with vegetables.

  • 1 pkg
    arborio rice
  • 1 md
    chopped onion
  • 2/3 c
    white wine
  • 6 c
    chicken broth
  • 1 stick
    butter, unsalted
  • 1 c
    parmesan cheese
  • 2 md
    zucchini chopped
  • 2 md
    bell pepper , red and yellow. chopped

How To Make risotto with vegetables.

    chop vegetables and fry them separate in little bit of olive oil. dry on paper towel. prepare 6 cups of chicken broth and let it simmer .

    in large pot melt one stick unsalted butter . add arborio rice . let it get a tiny bit brown. keep stirring. then add wine and let it evaporate . a little at a time add scoops of broth and keep stirring . keep doing this until all broth is gone . rice is supposed to be tender but firm. a little bit al dente . dont overcook.

    at this point add the cooked veggies . mix well. add parmesan cheese and mix well. serve hot . enjoy !!
