linguine with tuscan style shrimp

I've been making this for years. I make this 1 or 2 times during Lent. This is fast (20 min.) and easy and tastes great. I serve with a tossed salad and crusty Italian bread.

Ingredients For linguine with tuscan style shrimp

  • 1 lb
    frozen shrimp
  • 1/2 lb
    dried linguine
  • 2 Tbsp
    olive oil, extra virgin
  • 4 clove
    garlic, finely chopped
  • 3
    plum tomatoes, diced (1 cup)
  • 1 tsp
    dried basil
  • salt and pepper to taste
  • juice of 1/2 a lemon

How To Make linguine with tuscan style shrimp

    Defrost shrimp under cold running water 3-5 minutes. Pat dry.

    Cook pasta according to package directions. While pasta is cooking, heat oil on low in large skillet; add garlic and cook for 1 minute (do not brown).

    Add shrimp and cook 2 minutes on medium. Add diced tomatoes and basil and cook an additional 2 minutes. Season with salt and pepper to taste. Squeeze lemon juice over the top. Toss with cooked pasta.
