What is a frittata? About.com says the following: In the culinary arts, a Frittata is a flat Italian-style omelet that's usually prepared in a cast-iron skillet. A brunch menu classic, the frittata may also have its origin in Spanish cuisine. To make a frittata, beaten eggs are cooked briefly in a hot skillet along with other ingredients such as onions, spinach, bacon and/or potatoes, and then topped with cheese and finished in the oven. When cooked in a round skillet, the frittata is then typically sliced into wedge-shaped portions for serving.

Ingredients For a vegetable frittata

  • 2 lg
    eggs
  • 2 Tbsp
    cream
  • a pinch
    of salt and pepper if desired
  • 1/2 to 1 c
    cut up fresh or frozen vegetables, thawed. (i used a mix of snow peas, carrots, water chestnuts, and broccoli)
  • 1 Tbsp
    butter
  • 2-3 Tbsp
    grated cheese (i used gouda)

    7 to 8-inch oven proof skillet

How To Make a vegetable frittata

    Whirl eggs and cream in blender until well-beaten. Add salt and pepper if desired. Set aside.

    Melt butter in skillet over medium-low heat. Saute vegetables 2-4 minutes. Pour beaten eggs over vegetables and cover skillet. Cook until eggs are almost set.

    Preheat broiler. Top frittata with grated cheese. Place under broiler for 2-3 minutes, until cheese is melted and frittata is puffy. Serve immediately.

    You can double this recipe for two if you use a 9-10 inch skillet. You can also add other herbs, like rosemary or thyme, if you like. Try different cheeses and different vegetable combinations.
