shrimp & pineapple kebabs w/brown sugar & lime

These shrimp and pineapple kebabs with brown sugar and lime glaze are a big hit with everyone that I have served them to. We have had "kebab parties" a few times this summer where I have made all 3 of the kebab recipes I have posted and everyone loved them. I served them with a huge platter of rice,corn on the cob and some grilled yellow squash and zucchini...seemed so fancy and took so little time and what a nice change from the standard hamburger,hot dog and chicken cookout. This picture and recipe is from the Relish magazine...hope you like it as much as we do.

Ingredients For shrimp & pineapple kebabs w/brown sugar & lime

  • 8
    10 inch bamboo skewers soaked in water for at least 30 minutes
  • 3 Tbsp
    dark brown sugar( i do use light brown sugar personally)
  • 3 Tbsp
    fresh lime juice
  • 4 tsp
    unsalted butter*
  • 1 Tbsp
    fresh ginger, minced
  • 2 tsp
    seeded jalapeno, minced
  • 1/4 tsp
    sea salt*
  • 1 1/2 lb
    large fresh shrimp, peeled and cleaned
  • 1
    fresh pineapple,peeled and cut into chunks
  • 2 tsp
    peanut oil

How To Make shrimp & pineapple kebabs w/brown sugar & lime

    The * are because IF I don't have unsalted butter then I use salted butter and omit the added 1/4 tsp sea salt in the recipe.

    Combine brown sugar, lime juice, butter, ginger,jalapeno and salt(if using) in a small but heavy saucepan. Bring to boil then turn it down and simmer for about 5 minutes or until syrupy.

    Toss shrimp and pineapple in peanut oil. Thread 4-5 shrimp on each skewer with pineapple chunks in between them.

    Heat your grill. Lightly oil grill and then grill the skewers about 2 minutes on each side brushing with the glaze as they cook.
