I was looking for something different to make and found this recipe in the newspaper years ago. It was a big hit with my family and at the same time, I was able to sneak in some vegetables for my kids.

Ingredients For scallop oriental

  • 1 lb
    bay scallops
  • 2 Tbsp
    soy sauce
  • 2 Tbsp
    dry sherry
  • 1/4 tsp
    sugar
  • 1/4 tsp
    cayenne pepper
  • 1/8 tsp
    ground ginger
  • 1/3 c
    peanut oil ( or vegetable oil)
  • 1/2 c
    cashews (optional) especially if allergic to nuts
  • 2 c
    sliced zucchini, unpeeled
  • 2 c
    fresh sliced mushrooms
  • 1 c
    sliced green pepper
  • 1 c
    sliced green onions
  • 1/3 tsp
    salt

How To Make scallop oriental

  • 1
    Combine soy sauce, sherry, sugar, pepper and ginger in medium bowl.

    Add scallops and marinate for 30 minutes.

    Heat oil in wok or iron skillet over medium heat.

    Saute cashews; remove and drain. (optional)

    Saute zucchini, mushrooms, peppers, onions and salt (3 minutes)

    Remove vegetables with slotted spoon. Set them aside.

    Add scallops to pan; saute for 3 to 4 minutes.

    Add remaining vegetables again and heat 2 minutes before serving over rice. Use brown or wild rice.
