sandy's salmon patties

These are great with ketchup! If you don't like it spicy, you can omit the jalapeno pepper and the hot sauce. Also you don't need much salt as the salmon has alot of salt already in it.

Ingredients For sandy's salmon patties

  • 1 15 oz
    can salmon, remove bones, don't drain
  • 2 sm
    green bell peppers, finely chopped
  • 1
    jalapeno pepper, finely chopped
  • 1 md
    onion, finely chopped
  • 1 1/2 c
    corn meal
  • 2/3 c
    flour
  • 2 md
    eggs, slightly beaten
  • seasonings: onion powder, garlic powder, salt and pepper
  • 1 Tbsp
    lemon juice
  • few shakes of hot sauce

How To Make sandy's salmon patties

    Chop peppers and onions in food chopper until very finely chopped.

    Put salmon in bowl, mix well with fork.

    Add all other ingredients and mix well.

    Shape by hand into patties.

    Heat about 1 inch of oil in heavy skillet (cast iron if you have it) on low to medium heat. I like to use a mixture of EVOO and Canola oil. Fry in hot oil for about 3 minutes on each side until golden brown. Be careful to not let your oil get too hot.

    Drain patties on paper towels. Enjoy!
