A great recipe given to me by a friend in Washington state. She always makes hers with fresh caught salmon from her local market.

Ingredients For salmon cakes

8 ozcanned salmon, drained

1/4 csliced scalions
-
1/4 cred bell pepper, diced

6unsalted crackers, crushed

2 Tbspplus 2 tsp mayonnaise

2 tspfresh lemon juice

2 dashhot pepper sauce
How To Make salmon cakes

1In medium bowl, combine all ingredients, mashing salmon bones with fork.

2Shape evenly into 4 cakes.

3Spray a medium nonstick skillet with cooking spray. heat over medium heat.

4Add salmon cakes; cook 8 min., turning once or twice, till lightly browned on both sides.
