A great recipe given to me by a friend in Washington state. She always makes hers with fresh caught salmon from her local market.

Ingredients For salmon cakes

  • 8 oz
    canned salmon, drained
  • 1/4 c
    sliced scalions
  • 1/4 c
    red bell pepper, diced
  • 6
    unsalted crackers, crushed
  • 2 Tbsp
    plus 2 tsp mayonnaise
  • 2 tsp
    fresh lemon juice
  • 2 dash
    hot pepper sauce

How To Make salmon cakes

    In medium bowl, combine all ingredients, mashing salmon bones with fork.

    Shape evenly into 4 cakes.

    Spray a medium nonstick skillet with cooking spray. heat over medium heat.

    Add salmon cakes; cook 8 min., turning once or twice, till lightly browned on both sides.
