My favorite way to cook salmon is to grill it on a charcoal BBQ,this is a favorite too! Ten minutes is medium rare,they way we like it,if you like salmon well done,roast an additional 3-4 minutes but don't dry it out! Sometimes I'll add a pat of butter on the fish as soon as it come out of the oven.

Ingredients For roasted salmon

2 t. olive oil

2 t. butter

2-3 lb salmon fillet

4 t fresh parsley,dill,green onion and cilantro,minced
-
2 t. red onion or shallot,minced
-
salt and pepper to taste

fresh lemon juice
How To Make roasted salmon

1Preheat the oven to 550F. On a baking sheet, heat oil and butter in the oven while it preheats. Sprinkle salmon with salt and pepper.Sprinkle chopped herbs and shallot on the hot oiled baking sheet. Place salmon flesh side down (skin side up) over the herb mixture and roast for about 5 minutes. Flip the salmon over and roast for another 5 minutes. Just before serving,squeeze lemon juice all over the salmon and add additional salt and pepper.
