peppery "popcorn" fish

This was really just fooling around in the kitchen trying to find a way to "bread" fish since I was out of breadcrumbs. I love a peppery breaded fish, so it may be necessary to slightly decrease the amount of pepper the recipe calls for. I was kind of surprised that it browned so nicely!

Ingredients For peppery "popcorn" fish

  • 2
    pieces tilapia (or other white fish)
  • 1 Tbsp
    lemon juice
  • 1 c
    non-buttered or salted popcorn, popped
  • 1/4 tsp
    salt
  • 1 tsp
    ground black pepper
  • dash
    paprika
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    italian seasoning

How To Make peppery "popcorn" fish

    Preheat oven to 350 degrees and lightly grease a baking dish. Pour the lemon juice over the fish and set aside.

    In a food processor (I used my magic bullet) pulse the popped popcorn until it resembles grated Parmesan cheese. Add the salt, pepper, garlic, paprika and Italian seasonings and pulse a few more times to well mix. Pour the popcorn mixture into a mixing bowl or ziplock bag.

    Blot the fish just dry enough so it isn't dripping and toss/shake so it is well coated on all sides. Place in prepared baking dish. Give a very quick spray of PAM over each and sprinkle a bit more of the popcorn mixture on top.

    Bake for about 10-15 minutes, until fish is done. Should look lightly browned.
