I got this recipe from a 26-year-old issue of 'The Workbasket' magazine. I don't know the particular reason the original submitter named it 'Miracle' Salmon Loaf, but I have made it and can attest that it is quite good, - flavorful and moist. Very easy to throw together, too! I hope you enjoy it as well. *Tastes best with fresh cooked salmon, but canned salmon is a fine substitute. Photo by Bing.

Ingredients For miracle salmon loaf

  • 1/2 c
    mayonnaise
  • 1 c
    cream of celery soup, undiluted
  • 1
    egg, beaten
  • 1/2 c
    chopped onion
  • 1/4 - 1/2 c
    chopped green pepper
  • chopped jarred pimento to taste
  • 1 Tbsp
    lemon juice
  • 1 tsp
    salt
  • 2 c
    salmon, fresh cooked or canned, flaked
  • 1 c
    soft, fine bread crumbs

How To Make miracle salmon loaf

  • 1
    Combine mayonnaise, soup, egg, onion, green pepper, pimento, lemon juice and salt. Add salmon and bread crumbs to mixture. Bake in a greased 3 x 5 inch loaf pan at 350 degrees for 45 minutes to one hour, or until heated through and flavors are blended.
