This delicious oyster casserole is another recipe from the 1800's. Uncle Archie (my grandmother's uncle) was supposedly a great cook because he had travelled the world, learning new ways to cook food, while working for the U.S. Federal Government. He may have been a little eccentric, but people always enjoyed his Southern hospitality when it included sterling silverware, fine crystal, and his meals made to perfection! I am sure the rich and/or famous of yesteryear enjoyed feasting on this oyster casserole.

Ingredients For great uncle archie's oyster casserole

  • 1 pt
    fresh oysters, chopped in bite sized chunks, reserve liquid
  • 4 Tbsp
    milk
  • 1
    egg, beaten
  • 4 Tbsp
    oyster liquid
  • 2 1/2 Tbsp
    worcestershire sauce
  • 1
    sleeve saltine soda cracker, crumbs
  • 1/2 c
    bread crumbs
  • 1/2 c
    diced onion
  • salt and pepper to taste (i use 1/4 tsp pepper and 1/2 tsp salt)
  • 1/2 c
    butter, melted

How To Make great uncle archie's oyster casserole

  • 1
    Melt butter in round Pyrex dish (2 or 3 quart) Mix all other ingredients with butter in Pyrex dish. (At this stage, the casserole should not be soupy, but should be very moist and have the appearance of a Southern dressing type of dish. If it is soupy, add a few extra crackers.)

    Bake for 10 minutes on middle oven rack @ 450 degrees using an aluminum foil covering. Remove aluminum foil and bake additional 10 minutes or until top of casserole begins turning brown. *Note* Be very watchful of this casserole as it cooks the last several minutes; you dont want your casserole to burn. Enjoy with grilled fish and tossed sald.
