Ingredients For easy salmon cakes

  • 1/4 c
    red pepper, finely chopped
  • 1/4 c
    green onion, finely chopped
  • 1
    large egg, beaten
  • 2/3 c
    crushed cracker crumbs
  • 1/3 c
    panko bread crumbs
  • 1/2 tsp
    pepper
  • 1/2 tsp
    old bay seasoning
  • 1 can
    (14 ounces) salmon, drained and flaked
  • 1/4 c
    mayonnaise
  • 1 Tbsp
    lemon juice
  • 1 tsp
    dijon mustard

How To Make easy salmon cakes

    In a small bowl, combine chopped red pepper, green onion, mayonnaise, lemon juice, Old Bay seasoning, mustard and pepper.

    Stir in egg, well drained salmon and the cracker crumbs. Mix thoroughly. Divide and form mixture into 6 to 8 balls. Roll balls in remaining Panko bread crumbs; flatten into cakes (about 1/2 inch thick)

    Fry cakes in 3 tablespoons of melted butter in skillet over medium heat for 3 to 4 minutes per side. Can be baked in the oven on a baking sheet at 375 degrees for 10 to 15 minutes on each side. or until golden brown.
