I like this recipe as it has my kind of ingredients added to it. One of the posters here sent in a good cole slaw recipe that would go good with this along with some hush puppies and taters!! Oh and you have got to have some yummy tartar sauce too!!

Ingredients For cajun catfish critters

  • 2 c
    canola oil or whatever oil you use
  • 1 c
    all purpose flour
  • 1/2 c
    stone ground corn meal
  • 2 Tbsp
    cajun creole seasoning
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1/2 tsp
    ground red pepper(cayenne)
  • 1
    egg
  • 2 lb
    catfish nuggets, skin removed
  • salt
  • 1/4 c
    lemon juice

How To Make cajun catfish critters

    Heat oil in heavy 3 quart saucepan ( I use my cast iron skillet) over medium high heat to 375*.

    Stir together flour,cornmeal,Cajun Creole Seasoning, onion and garlic poweders and red pepper in shallow dish. Beat egg in another shallow dish with fork until foamy.

    Sprinkle catfish nuggets with salt and lemon juice. Dip each nugget into beaten eggs then roll in flour mixture to coat. Drop 4 to 6 nuggets at a time into the hot oil. Cook 2 minutes, turn and cook 1 minute longer. Remove from oil, drain on paper towels.
