Ingredients For baked haddock w/ lobster sauce

  • 4 Tbsp
    butter
  • 2 Tbsp
    fresh chopped parsley
  • 1-1/2 Tbsp
    lemon juice
  • 1/8 tsp
    white pepper.
  • 6
    haddock filets
  • 1-1/4 c
    light cream
  • 4 Tbsp
    butter
  • 1 tsp
    flour
  • 3
    egg yolks
  • salt and black pepper to taste
  • 1-1/2 Tbsp
    lemon juice
  • 8 oz
    fresh lobster meat, cooked, chopped.

How To Make baked haddock w/ lobster sauce

    In bowl, w/ mixer, beat light cream, 4 tbsp butter, flour, egg yolks and salt & pepper to taste. Beat until smooth. Pour into heat-proof bowl. Place bowl in a pan of water that goes up 1/2 way up the sides of bowl. Place heat on low and simmer, whisking occasionally for 25 min. Spray a wide, shallow oven-proof casserole dish w/ cooking spray. Lay 1/2 the parsley in bottom of dish. Sprinkle 1/2 the lemon juice over parsley. Sprinkle w/ white pepper. Place fillets on parlsey. Cover w/ remaining parsley. Sprinkle w/ lemon juice, salt and pepper.Cover dish and bake @ 350 for 10-15 min, or until fish flakes easily. Just before serving, stir the remaining lemon juice and lobster meat into sauce in bowl. Spoon sauce over fillets.
