A rice dish was planned and it resulted in orzo, then into a chicken stir-fry, and today it's a soup. When I reached for rice, I took down a jar of orzo, and I cooked it and noticed it was not rice. The recipe was for Rice with cilantro and lime juice, with squash served on top. I cooked chicken in a stir-fry method, added the veggies and served them on top of orzo. This morning I combined chicken broth with all, and it became soup! I learned from mom, nothing goes to waste, and this is really delicious soup.

Ingredients For oops-it's not rice-soup

  • 1 1/2 lb
    skinless chicken breasts
  • 2 Tbsp
    olive oil
  • 1 clove
    garlic
  • 2 c
    water
  • 1 c
    orzo (thought it was rice)
  • 1/2 tsp
    salt
  • 1
    lime, squeezed
  • 1/4 c
    minced fresh cilantro
  • 2 md
    summer squash, cut into large chunks
  • 2 md
    zucchini squash, cut into large chunks
  • 3 c
    chicken broth
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    butter
  • salt and pepper to taste

How To Make oops-it's not rice-soup

    Heat olive oil in a large skilled, add chunks of chicken and stir often, add minced garlic and cook a few minutes more, until chicken is golden brown on all sides.

    Meanwhile cook the orzo, I used a steamer, but it can be boiled. I used a steamer, but you can boil the chunks of squash separately, for perhaps twenty minutes. Drain thoroughly.

    Combine the orzo, lime juice and cilantro. Stir the butter and brown sugar into the squash and mash it a little, add veggies to the chicken. *NOTE: I served the squash and chicken over the orzo the first meal. In the morning I took what was left and combined this with the chicken broth and heated it to make a delicious hot soup.
