I found the original recipe on a can of french fried onions. I modified it to make it easier. Even tastes better too! :)

Ingredients For onion chicken

    boneless, skinless chicken breasts
  • 1/4 c
    honey, any variety. i use clover.
  • 1 can
    french fried onions
  • 3 Tbsp
    all purpose flour

How To Make onion chicken

    First, I take the chicken breast and slice in half lengthwise. Next I put one piece of the chicken in a large ziploc bag. I then pound the chicken down to 1/2". Repeat with all chicken pieces.

    I grease a baking pan with olive oil *extra virgin* big enough to hold the chicken and put the pounded breasts flat in the pan. I then take a pastry brush and start brushing the honey across the top of the chicken.

    I prepare the french fried onions in another large size ziploc bag. I add the onions and the 3 Tablespoons flour to the bag and shake to spread the flour around. Then I crush the onions as fine as I can get them with the mallet. I then place the crushed onions onto the top of the chicken breasts. Bake at 400 degrees 20-25 minutes. This recipe saves calories, because only one side is coated with the onions! :)) No sacrifice on crunchy goodness though!! :) Serve hot from the oven!
