While watchin' Lonesome Dove this recipe came to me in a vision of hunger and Lone Star beer.

Ingredients For ol charlie's by god woodrow chicken soup

  • 1/2 md
    chicken (skin and bone on)
  • 1 md
    yellow onion chopped
  • 5 clove
    garlic rough chopped
  • 3 stick
    celery sliced
  • 3 sm
    carrot, sliced
  • 1 bunch
    fresh kale, chopped
  • 1 md
    sweet potato chopped in 1 inch pieces
  • 2 sm
    potatoes chopped into 1 inch pieces
  • 1/2 pkg
    egg noodles
  • 1 can
    tomatos and green chiles
  • 1 box
    chicken broth (32 oz.)
  • 4 c
    water
  • 1 tsp
    ground black pepper/sea salt/ season salt/tony's cajun seasoning/rosemary sprigs/
  • 1 dash
    louisianna hot sauce
  • 1/2 md
    bell pepper chopped fine
  • 1 sm
    jalepeno de-seeded and chopped fine
  • 2 sm
    yellow squash cutt into 1 inch slices

How To Make ol charlie's by god woodrow chicken soup

    take skillet and heat 1 tablespoon butter and 1 tablespoon bacon grease combined. add whole halfed chicken seaoned with half of dry ingrediants when skillet good and hot roast until browned on both sides. Remove chicken and lower heat in skillet.

    Place browned chicken into stew pot on medium high heat add 32 oz. box of chicken broth cover with lid .

    place all chopped veggies into skillet to brown (reserve kale for later) cover with lid and stir from time to time to prevent sticking.

    Take chicken from pot after 45 minutes let cool and pull off of bone , place pulled chicken back into pot, you can wrap carcase for stock for your next pot of soup if you'd like.

    Take browned veggies and put into stew pot add 4 cups of water ( use it to rinse out skillet into pot!)

    add kale and canned tomatoes and chiles . Reduce heat and simmer for 2 hours

    add the half package of noodles and let cook until all is tender ( complete cooking time usually runs around 3 to 3&1/2 hours) Serve with cornbread and Ice tea or Cold Beer...By God Woodrow that's eatin" I promise you!
