mom's bacon chicken & rice w/ 4 soups

This is one of my favorites Mom used to make. Whenever she asked, "What do you want me to make this week for dinner?" This was always my answer. Ok, Mom didn’t add bacon, but bacon makes everything better. Bacon was my idea! You don't have to use bacon if you don't want too. The pictures here are without.

Ingredients For mom's bacon chicken & rice w/ 4 soups

  • 1 can
    cream of celery soup
  • 1 can
    cream of chicken soup
  • 1 can
    cream of mushroom soup
  • 1 can
    cream of onion or cheddar cheese/nacho cheese or broccoli cheese
  • 1 stick
    butter, melted
  • 2 c
    minute rice, cooked & cooled
  • 2 lb
    boneless & skinless chicken breasts
  • 8 slice
    bacon, uncooked

How To Make mom's bacon chicken & rice w/ 4 soups

    Preheat oven to 350 degrees F. Grease a 9" x 13" baking dish.

    Take chicken breasts & cut in ½ lengthwise. Wrap bacon around each piece

    In a large bowl, mix together all soups. Add in cooked rice. RICE NOTE: When doing the rice; measure for the 4 servings & go from there.

    Spread 1/2 in baking dish. Place chicken over rice/soup mixture. Spread remaining rice/soup mixture over chicken. Bake for 2 1/2 hours. Let rest 5 minutes before serving. Enjoy!
