Ingredients For jambalaya

  • 1/2 c
    olive oil
  • 3 c
    chopped onions
  • 2 Tbsp
    minced shallots
  • 1 Tbsp
    minced garlic
  • 1 c
    chopped green bell pepper
  • 3 tsp
    salt, in all
  • 1 lb
    adouille sausage, cut in 1/4 inch slices
  • 1 1/2 lb
    white and dark chicken meat, cut into 1" cubes
  • 1 1/4 tsp
    cayenne pepper
  • 3 c
    long grain rice
  • 6 c
    water, or chicken broth (i use broth)
  • 3
    bay leaves

How To Make jambalaya

  • 1
    Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.

    Add the sausage and continue browning, cooking about 15 minutes.

    Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.

    Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
