Ingredients For healthy chicken stroganoff

  • 4
    boneless, skinless chicken breasts, pounded thin
  • 3 Tbsp
    olive oil, extra virgin
  • 1 lg
    onion, thinly sliced
  • 8 oz
    fresh sliced mushrooms
  • 1-1/4 c
    light sour cream
  • salt and pepper to taste
  • 1 Tbsp
    chopped fresh parsley
  • 1/2 lb
    cooked, drained no-yolk noodles

How To Make healthy chicken stroganoff

    Cut chicken into strips. Heat 2 tbsp oil in lg skillet, over medium heat. Add onion. Cook until softened. Add mushrooms, and cook until browned.

    Remove veggies from skillet. Add remaining oil to skillet. Cook chicken in oil in small batches for about 4 mins. Place mushrooms and onion back into skillet.

    Season w/ salt and pepper. Stir in sour cream. Bring to a boil, stirring for 1-2 mins. Sprinkle w/ parsley. Serve over noodles.
