Ingredients For grilled chicken and tossed salad

  • 1 lb
    boneless, skinless chicken breasts
  • 1/4 c
    balsamic vinegar or red wine vinegar
  • 3 Tbsp
    olive oil, extra virgin
  • 2 clove
    minced garlic
  • 6 c
    mixed baby greens
  • 1 md
    green bell pepper cut in strips
  • 4 oz
    canadian mozzarella cheese sliced
  • 4 md
    tomatoes thinly sliced
  • 1/4 c
    thinly sliced fresh basil
  • 1/2 c
    grated parmesan cheese

How To Make grilled chicken and tossed salad

    Preheat BBQ grill to medium high..In a bowl whisk vinegar, oil, garlic and s&p..place chicken in shallow bowl and pour 3 tablespoons oil mix over chicken and stir and turn over to fully coat the chicken, place chicken on grill, cover and grill for about 5 minutes until light brown and flip over and cook the other side until no longer pink.

    transfer to cutting board let rest 5 minutes and cut into 1/2 inch slices.

    In large bowl toss the greens and pour over remaining dressing and toss , arrange tomatoes, mozzarella over top and sprinkle with basil and parmesan cheese.
