Ingredients For green chili chicken enchiladas

  • 2 c
    shredded cooked chicken
  • 1/2 c
    thinly sliced green onions
  • 3/4 c
    shredded cheddar cheese
  • 3/4 c
    shredded monterey jack cheese
  • 1/4 c
    sour cream
  • 1 can
    (4oz) diced green chiles
  • 1/4 c
    chopped fresh cilantro
  • salt and pepper to taste
  • crisco oil as needed
  • 12
    corn tortillas
  • crisco no stick cooking spray
  • ENCHILADA SAUCE
  • 2 Tbsp
    crisco oil
  • 2 Tbsp
    all purpose flour
  • 2 Tbsp
    chili powder
  • 1 tsp
    ground cumin
  • 1 can
    chicken broth
  • 1 can
    tomato sauce
  • 1 tsp
    salt
  • 1/4 tsp
    garlic powder

How To Make green chili chicken enchiladas

    Heat Oven to 350 degress. Prepare Enchilada Sauce

    Enchilada Sauce: Heat Oil in Large saucepan, Stir in flour and chili powder. Cook for 1 minutie. Add remaining Ingredients, bring to boil, and simmer for 10 min. Makes three cups of sauce Enchiladas: Mix together chicken, green onions, 1/2 cup cheddar, 1/2 cup Monterey Jack, sour cream, chiles and cilantro in a medium bowl. Stir in 1/2 cup Enchilada Sauce, stir intil well blended. Season with salt and pepper. Set aside
