Growing up I always loved going to Grandma & Grandpa Small's on cold day.. Walking in you always felt at home and the smell of red rice soup cooking was always amazing.. anytime I make this, I am transported back in time & smile at the memories I have thanks 2 a simple yet delicious soup

Ingredients For grandma small's red rice soup

1 crice

1 smwhole chicken
-
1 cantomato sauce
-
2-3 stickcarrots, chopped
-
2-3 stickcelery, chopped
-
1 canchicken stock
-
salt & pepper to taste
How To Make grandma small's red rice soup

1In large pot, fill 2/3 with water & add chicken. Bring to a boil, lower heat to simmer. When meat is done, remove to cool.

2in the same pot, add rice, vegetables, tomato sauce & chicken stock, bring to a boil, then cover & simmer until rice is done (will be soupy)

3Skin & clean chicken, shred & add back into soup (add water if needed)

4additional options: ~saute carrots, onions, garlic, & celery prior to boiling chicken, remove once sauteed to cool then add water & chicken.. add vegetables back to broth once chicken is removed ~add 1 can diced tomatoes
