This is my entry for the Ninja Chef's Challenge using Chicken Breast, Ginger, and Avocado. I absolutely love Asian cuisine and when I saw the ingredients for the challenge my thoughts automatically went to making something with an Asian flair. This was so good and healthy for you too!

Ingredients For ginger mandarin chicken salad with avocado

  • DRESSING
  • 2 Tbsp
    rice vinegar
  • 2 Tbsp
    light brown sugar
  • 1 1/2 Tbsp
    soy sauce
  • 1 Tbsp
    Sriracha sauce
  • 1 1/2 tsp
    fresh ginger, grated
  • 1/4 c
    canola oil
  • pinch
    salt
  • SALAD COMPONENTS
  • 11 oz
    canned mandarin oranges, drained
  • 6 c
    cabbage, shredded
  • 2 c
    cubed or sliced cooked chicken breast
  • 1 lg
    firm-ripe avocado, pitted, peeled, and cubed
  • 4
    green onions, trimmed and sliced diagonally
  • 1/4 c
    chow mein noodles
  • 2 Tbsp
    sesame seeds, toasted

How To Make ginger mandarin chicken salad with avocado

    In a bowl, whisk together vinegar, brown sugar, soy sauce, Sriracha sauce, and ginger. Slowly drizzle in oil, whisking constantly. Season with salt. Set dressing aside.

    In a large serving bowl, toss cabbage and chicken with dressing.

    Top with avocado, orange slices, and chow mein noodles, then garnish with green onions and sesame seeds.
