This is a simple version of this Fat Tuesday that you make in one pan! Delicious!

Ingredients For down easy jambalaya

  • 1 1/2 c
    long grain rice, uncooked/uncle ben's
  • 2 1/2 c
    chicken stock
  • 1 tsp
    tomato paste
  • 1 sm
    sweet onion diced
  • 1 md
    shallots diced
  • 2 clove
    garlic minced
  • 2 Tbsp
    chopped flat leaf parsley
  • 1 md
    carrot diced
  • 1 md
    bell pepper diced
  • 2 stalk
    celery ribs diced
  • 3
    bay leaves
  • 1 pkg
    sazon seasoning (see photo) if you can't find it use old bay seasoning.
  • 4 Tbsp
    olive oil or canola oil
  • 1 lb
    sweet or hot sausage/kielbasa or andouille cooked and sliced
  • 1 lb
    diced cooked chicken, dark or white meat(i took mine off the bone)
  • 1 lb
    cleaned and peeled shrimp
  • 3 Tbsp
    louisiana hot sauce

How To Make down easy jambalaya

    Using a large heavy bottom skillet or pot,heat the oil until it starts to shimmer,add the onions and shallots,garlic,saute for 2-3 minutes,add the vegetables and spices including the sazon or old bay,continue to saute for 2-3 minutes more.

    Add the rice and saute to coat well,2-3 minutes.add the stock,tomato paste,hot sauce and cover leaving it ajar so you can let the steam escape,lower the heat to a simmer.

    When the rice is almost finished(about fifteen minutes out) add the chicken,sausage and the shrimp.continue to cook until shrimps are just done and the dish is heated through.Serve in bowls with the chopped parsley as a garnish and serve with warm cornbread and butter!! Enjoy!! :)
