Ingredients For crock pot chicken enchilada soup

  • 2-3
    chicken breasts
  • 1 Tbsp
    olive oil
  • 1 can
    rotelle (choose your heat)
  • 1 can
    cream of chicken soup
  • 1 can
    nacho cheese soup
  • 1 can
    corn
  • TOPPINGS
  • mexican crispy tortilla strips
  • sour cream
  • mexican blend shredded cheese

How To Make crock pot chicken enchilada soup

  • 1
    Cook chicken in olive oil in skillet. Let stand for several minutes, then shred.

    Add all ingredients including shredded chicken to crock pot, stir well.

    Cook on low for 4-6 hours. Serve with above toppings per dish. ENJOY!
