THIS IS ONE OF MY VERY FIRST RECIPES I CREATED SOME 35 YRS AGO... STILL COMIN UP WITH NEW IDEAS...

Ingredients For chicken stroganoff

  • 1 1/4 lb
    chicken breast tenders... cut in bite size pieces
  • 1/3 c
    both stick butter and conola oil
  • 8 oz
    3-5 different kinds of fresh and/or wild mushrooms
  • 1 md
    yellow onion... chopped
  • clove
    garlic ... to taste
  • 1 1/3 c
    mixed red and green bell peppers... chopped
  • 2 tsp
    dried celery leaves ... crushed
  • 24 oz
    fat free 1% cottage cheese
  • 1 Tbsp
    dried chives
  • milk... as needed
  • 1/2 lb
    egg noodles... cooked

How To Make chicken stroganoff

    in large fry pan heat butter an oil while that heats up chop all mushrooms an mix together in lg bowl....

    once oil/butter is hot[ when drop of water "jumps" when put in pan] add chicken pieces... may need to do 2-3 batches while chicken browns... chop onions,peppers,and garlic

    once all meat is browned... add onions,peppers,garlic... cook an stir til onion limp.. remove from pan

    divid mushrooms into 3-4 batches an cook add more butter/oil if needed

    cook noodles by pkg directions drain well cover set aside

    while mushrooms cook... take cottage cheese celery leaves,and chive an put in food processor.....mix til smooth an creamy... drizzle some milk into it if to thick[ most times is bout 1/4 c milk i add]

    once last batch mushrooms cooked mix chicken with veggies,all the mushrooms,cottage cheese mix in a lg bowl stir...spray 2 9x11 glass pans.... divid mixture into both pans...cover with foil.....

    bake at 350 for 45 -50 min remove foil bake 5 min more let rest 10 min before slicing an seving with sprinkle of chives on top of each serving
