Over the years, this age old recipe has been modified many, many times. This particular recipe seems to be our family go to. Note: Of course we use our own flavorable homemade spaghetti sauce

Ingredients For chicken cacciatore

  • 4
    chicken breast halves, skinless and boneless
  • 2 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    fresh ground black pepper
  • 4 Tbsp
    cooking oil
  • 1 lg
    onion, chopped
  • 3 clove
    garlic, minced
  • 1 lg
    green pepper, chopped
  • 1 can
    (14.5 oz) italian style diced tomatoes
  • 1/2 c
    spaghetti sauce
  • 1/2 tsp
    dried oregano
  • 2 c
    fresh mushrooms, chopped
  • salt and pepper (to taste)

How To Make chicken cacciatore

    Combine the flour, salt and pepper in a plastic bag. Shake the chicken pieces in flour until coated. Heat the oil in a large skillet. Fry the chicken pieces until they are browned on both sides. Remove from skillet.

    Add the onion, garlic and bell pepper to the skillet and saute until the onion is slightly browned. Return the chicken to the skillet and add the tomatoes, oregano and spaghetti sauce. Cover and simmer for 30 minutes over medium low heat.

    Add the mushrooms; salt and pepper to taste. Simmer for 10 more minutes.

    Serve hot over your favorite pasta
