Easy to make,no pots and pans to clean up! Great meal on a cold snowy or rainy day! Delicious!!

Ingredients For chicken cacciatore

  • 1 lg
    cut up fryer chicken
  • 1 md
    sweet onion / sliced
  • 2 md
    sweet bell peppers/ 1red1green
  • 4 clove
    garlic halved
  • 2-3 md
    bay leaves
  • 1/2 c
    chopped italian parsley(flat leaf)
  • 2 Tbsp
    fresh basil
  • 1 can
    italian plum tomatoes(preferably san marzano)
  • 1/4 c
    good olive oil
  • 1 tsp
    salt and pepper
  • 1 pkg
    sliced mushrooms(optional)
  • 1 c
    parmigiano-reggiano, grated
  • 1 c
    good dry red wine( i used a pinot noir)

How To Make chicken cacciatore

    Rinse an clean the chicken,remove any excess fat.Season with salt and pepper,then lightly brown in a skillet with half of the oil. In the same skillet ad the sliced onion,garlic halves,sauté lightly then add the bell peppers,mushroom and the remainder of the olive oil.

    Turn your slow cooker,set on high for two hours,add the chicken,vegetables,spices,wine and the tomatoes. I like to break up the tomatoes slightly,the cooker will do the rest!

    After two hours set to low for two hours and wait for some of the best cacciatore you've ever had! Please remove the bay leaf to avoid any choking hazard and discard them. This can be served over your favorite pasta,or with a starch such as rice or potatoes. A warm loaf of good crusty bread goes well to sop up the delicious gravy with too! And don't forget the wine! enjoy!!
