1 quart buttermilk

4 teaspoons kosher salt

1 teaspoon freshly ground black pepper

How To Make buttermilk brine for chicken with variations

1Combine buttermilk, salt, and pepper in a large resealable plastic bag. Add chicken and chill at least 4 hours or overnight. Drain before using.

2VARIATION #1 Curry Add 4 tsp. curry powder, 2 tsp. ground cumin, and 2 tsp. ground turmeric.

3VARIATION #2 Chipotle Add 2 Tbsp. adobo sauce from a can of chipotle chiles in adobo.

4VARIATION #3 Louisiana-Style Add 2 Tbsp. smoked paprika, 2 tablespoons Tabasco, and 2 tsp. celery seeds.

5VARIATION #4 Lemon-Dill Add 2 thinly sliced lemons, 4 finely grated garlic cloves, and 2 cups chopped fresh dill.
