Often times I'm asked "Just what do you brine a chicken IN?" Well, it varies so I thought I'd include a few choices here. Lindsey (granddaughter) I hope you are paying attention. ;-)

Ingredients For buttermilk brine for chicken with variations

  • BASIC RECIPE
  • 1 quart buttermilk
  • 4 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • whole chicken and/or chicken pieces

How To Make buttermilk brine for chicken with variations

  • 1
    Combine buttermilk, salt, and pepper in a large resealable plastic bag. Add chicken and chill at least 4 hours or overnight. Drain before using.

    VARIATION #1 Curry Add 4 tsp. curry powder, 2 tsp. ground cumin, and 2 tsp. ground turmeric.

    VARIATION #2 Chipotle Add 2 Tbsp. adobo sauce from a can of chipotle chiles in adobo.

    VARIATION #3 Louisiana-Style Add 2 Tbsp. smoked paprika, 2 tablespoons Tabasco, and 2 tsp. celery seeds.

    VARIATION #4 Lemon-Dill Add 2 thinly sliced lemons, 4 finely grated garlic cloves, and 2 cups chopped fresh dill.
