Ingredients For cheesy buffalo chicken casserole

  • 1 lb
    rotini pasta
  • 1 Tbsp
    avocado oil
  • 4 c
    sliced leftover rotisserie chicken
  • 4 Tbsp
    creamy wing sauce, divided
  • 1 c
    heavy cream
  • 1
    packet Italian dressing mix
  • 4 oz
    cream cheese, softened
  • 3/4 c
    half and half
  • 2
    banana peppers, chopped
  • 1 c
    crumbled blue cheese
  • 1 c
    shredded colby jack cheese
  • 3/4 c
    shredded Swiss cheese
  • 3/4 c
    shredded sharp cheddar cheese

How To Make cheesy buffalo chicken casserole

    Preheat oven to 350 degrees F. Lightly grease an 11 x 8 x 2-inch baking dish.

    Cook rotini pasta according to package directions.

    Heat avocado oil in large saucepan over medium heat. Add rotisserie chicken and saute for 5 minutes or until tender. Stir in 2 tablespoons wing sauce. Remove from heat.

    In a large bowl, combine heavy cream, Italian dressing mix, cream cheese, half and half, chopped banana peppers, blue cheese and remaining wing sauce; whisk together until blended.

    Add cooked rotini pasta and blue cheese sauce into chicken mixture. Stir well until combined.

    Pour into the baking dish. Sprinkle with colby jack, Swiss and sharp cheddar cheese.

    Bake for 25 minutes or until the chicken mixture is hot and bubbling and the cheese is melted.
