balsamic meat loaf with garlicky beans

I have tried several kinds of meat loaf and I prefer this combination of meat, I find just using beef the loaf is tough., this combination is my favorite.

Ingredients For balsamic meat loaf with garlicky beans

1/4 cplus 2 tbsp ketchup

4 Tbspbalsamic vinegar

2large eggs

1/2 cdry bread crumbs

1 lbground chicken
-
3/4 lbground lean pork
-
2 tspolive oil, extra virgin

6 clovegarlic 4 finely chop and 2 thinly sliced

1 dashfresh flat leaf parsley finely chopped

2 Tbspolive oil
-
1/4 tspcrushed red pepper flakes

1 can{15.5 oz. red or white kidney beans

1 bunchbaby spinach rough chop about 2 cups
How To Make balsamic meat loaf with garlicky beans

1Heat oven to 375F lined a rimmed baking sheet with foil.. in a small bowl whisk together 1/4 cup ketchup and 2 tbsp vinegar and set aside.

2In large bowl whisk together the eggs remaining 2 tbsp ketchup and vinegar , s and p to taste..mix in the bread crumbs, add the parsley and chopped garlic and add the chicken and pork and mix to incorporate.

3Shape meat mixture into 2 loaves and place on prepared baking sheet..bake for 20 to 25 minutes, brush with ketchup-vinegar mix and bake an additional 10 to 15 minutes.or internal temperature is 150F.

4While the meat loaves are baking for the last time , heat the oil in large skillet over medium heat add the sliced garlic, stirring until light golden add the beans and 1/4 cup water and cook until heated through about 3 minutes, add the spinach and cooking tossing until it begins to wilt..serve the beand with the meat loaf baked or mashed potatoes go great with this meal.
